I always have the same problem when I am rushing somewhere or just feel like working out and need that little boost of energy to keep me going.

I came across energy bites not so long ago and figured that they are such a great and healthy way to fuel our bodies at those moments when we feel like our tanks are getting empty.

They are also so easy to make (literally took me 15 minutes) and they can last in the refrigerator for two weeks or just put them in the freezer for however much time you want !

One of the recipes below can be made in a bowl and doesn’t require any special equipment, for the second one (with dates) will need a food blender.

Peanut Butter and Oatmeal Energy Bites

Ingredients
  • 1 Cup Rolled Oats
  • 1 tbsp Chia Seeds
  • ⅓ Cup Peanut Butter
  • ⅓ Cup Maple Syrup or Honey
  • 1 tsp Vanilla Extract
  • Pinch of Salt
  • ¼ Cup White Chocolate Chips
  • ¼ Cup Dried Cranberries
Directions
  • Step 1 Place all the ingredients in a large bowl and mix together until combined.
  • Step 2 The texture of the mixture should be like cookie dough, if it is too dry you can add some more peanut butter and if too wet or sticky add some more oats.
  • Step 3 Place the bowl in the refrigerator to set for 30 minutes.
  • Step 4 Remove the bowl from the fridge and start making small balls out of the mixture, you can choose any size you like!
  • Step 5 Place them in the freezer for a longer shelf life.

Date Energy Bites

Ingredients
  • 1 Cup walnuts
  • 0.5 Cup Shredded Coconut
  • 1 Cup Pitted Dates
  • 1/2 tsp salt
  • 1 tsp Vanilla Extract
  • 2 tbsp of Coconut Oil
Directions
  • Step 1 Place the walnuts and coconut in a large food blender until they are crumbly and combined.
  • Step 2 Add the dates, vanilla, salt and coconut oil and mix together till it is sticky.
  • Step 3 Scoop the mixture with a teaspoon and then roll between your hands to form a ball.
  • Step 4 Store in a sealed container in the fridge for up to a week or the freezer for a longer shelf life.
